“Poké” originates from the beautiful islands of Hawaii centuries ago, where indigenous Hawaiians seasoned freshly caught reef fish with sea salt, seaweed, and crushed kukui nuts. In the 2010s, poké made its way to the mainland United States, sparking the global popularity we know today. Through generations of cultural influence and evolution, it is now commonly served with cubed raw fish over a base of rice or greens, topped with fresh vegetables, flavorful sauces, and crunchy garnishes.
At Maui, we take this tradition one step further through our fusion identity, blending vibrant Korean and Japanese flavors into the food we serve. We bring the comforting tastes of our homeland, South Korea, through ingredients like traditional kimchi, savory beef bulgogi, and our signature gochu grill sauce for a pleasant kick. We also incorporate authentic Japanese favorites such as chicken katsu, soba salad, unagi eel, and teriyaki sauce, adding yet another cultural depth to your meal.
